Ginger Bread Biscuits

Ginger Bread Biscuits


I wasn't bought up with ginger bread, so it's all a bit of a mystery.

These ones actually rose a bit. I cooked them on 220, which kind of dried them out. Still good though

Next time I'll do them lower, for longer.

Also, more ginger next time.

dry ingredients


  • 3 cups sifted self raising flour

wet


  • 50g of butter
  • zest of 1 lemon
  • 3 big spoons of golden syrup
  • 1 tsp vanilla
  • pinch of salt
  • 3/4 cup of brown sugar
  • 2 eggs
  • 1 tablespoon ginger
  • 1/4 tsp ground cloves
  • 1 tsp cinnamon



Instructions


  1. beat together all wet ingredients using a wand or some such
  2. stir flour into wet ingredients and fold until it's a firm pastry
  3. wrap in plastic for 2 hours
  4. roll out into a sheet 1/4" (5mm)
  5. cut out shapes and place on tray with baking paper
  6. bake at 180deg C for 10min
  7. take out. Let cool. and decorate. or eat
